The town of Aghione is not far from the old Roman capital of Corsica, Aleria, on the eastern coast of the island, poetically known as the Costa Serena. Flanked against the mountains where the flats begin to rise into the hills, this small village of 245 inhabitants is just as celebrated today for its olive groves and vineyards as it was thousands of years ago.
The Amalric family has farmed Domaine de Marquiliani since the 1950s with Daniel Amalric and his daughter Anne at the reigns.

Let’s begin with their olive oils:

Domaine de Marquiliani’s extra virgin olive oils, made from local olive varieties, are widely regarded as the best in Corsica if not all of Europe. The olives are harvested in November, December, and January then quickly brought to the mill and are gently pressed to keep the full aromas and freshness intact. After the cold pressing the oil is stored at cellar temperature for 2 to 3 months before bottling. It's prudent to note that like their Rose wine, these oils are absurdly hard to come by.
And as a side note: it takes up to 33 lbs of olives to make one liter of Marquiliani olive oil!

From left to right:
The Extra Virgin Olive Oil “Fruitee Sauvage” is from the Sabine varietal. It possesses a fruity scent and a silky, aromatic, sweet, beguiling taste ($44).

The second bottle is Extra Virgin Olive Oil “Ghjermana” produced from the Ghjermana olive. Creamy and intense. Aromas of fresh almond and herbs. Its balanced flavor, its fruity character, and its lightness on the palate makes it perfect as a finishing oil. This one is full of elegance ($40).

The third bottle, Extra Virgin Olive Oil “Fruitee Douce”, is a blend of Ghjermana and Leccio. This is a soft and elegant oil and perhaps the richer of the three. Smooth and silky texture with notes of tomato leaf, raw almond, mountain grass, and subtle notes of black pepper on the finish. This would be brilliant as part of a Caeser Salad Dressing ($40)..

Kermit Lynch deserves an award for finding Corsica's rarest Rose and introducing it to America. Mineral-laced blood orange, strawberry and lavender scents show striking clarity and focus. This Rose is as delicate as it gets, almost vaporizing on your palate leaving a delicate impression.
A perfect aperitif wine.
